Hong Kong Curry Rice
This Hong Kong dish is always worth the nap that comes (right) after!

Ingredient list
The dish that brings us back to the Dai Pai Dong's of HK!

CURRY INGREDIENTS:
• Curry Base
• 1 tbsp neutral oil
• 1 tbsp massaman Thai curry paste
• 1/2 white onion
• 1/4 cup coconut milk
• 4 medium sliced potatoes
• bay leaves
• 2 cups low-sodium chicken broth

FRIED PORK CHOP INGREDIENTS:
• 1 lb pork shoulder chop (not lean cuts)
• 1 tbsp Soy Sauce
• 2 tbsp Oyster Sauce
• 1 tbsp Shaoxing wine
• 2 tsp sugar
• cover in cornstarch
• 4 tbsp frying oil
How to make it
Curry Sauce + Pork Chops:
Add all ingredients and simmer 45 mins on low heat
Ensure doesnt get too low - add water as needed
Top with splash of fish sauce, 1/2 tbsp oyster sauce, 1 tsp sugar in last few mins
Marinade the pork chops in soy sauce, oyster sauce, shaoxing wine + sugar
Cover in cornstarch
Heat frying oil and fry pork chops on both sides until golden brown (around 5 minutes)
Fry in batches to not overcrowd the pan
